PB&J for a Day Recipes

On Earth Day, making a difference can be good for the environment, and can also be delicious! Sodexo picked America's favorite sandwich to show that helping the planet is easy, fun, and tastes great. Try these delicious recipes and you too will be eating lower on the food chain. You may also watch each recipe being made by clicking on the pictures.


Sodexo PB&J for a Day - play to watch!Triple Decker Nutter Fluffer Peanut Butter Sandwich

A new twist on an old original.

 

 

Ingredients:
3 Slices Texas Toast
4 Tbsp Peanut Butter, Creamy
1 Tbsp Strawberry Preserves
2 Tbsp Marshmallow Topping

Directions:
Spread 2 Tbsp peanut butter on one slice of bread.
Spread 1 Tbsp strawberry preserves on top of peanut butter.
Top preserves with 2nd slice of bread.
Spread 2 Tbsp peanut butter on 2nd slice of bread.
Spread 2 Tbsp marshmallow topping on top of peanut butter.
Top marshmallow with 3rd slice of bread.
Cut sandwich in half diagonally and serve.
Note: If left over, do not reuse.


Triple Decker Nutter Fluffer Peanut Butter & Chocolate Banana Melt Sandwich

Peanut butter and bananas never tasted so good!

 

 

Ingredients:
2 slices Texas Toast
2 oz Peanut Butter
12 slices Banana, sliced 1/4"
2 Tbsp chocolate chips
2 tsp Margarine

Directions:
Spread 2 Tbsp Peanut Butter on each slice of bread.
Place 12 slices (2 oz) bananas, sliced 1/4", on peanut butter side of 1 slice of bread.
Top bananas with 2 Tbsp chocolate chips.
Close sandwich with 2nd slice of bread, peanut butter side down..
Spread 1 tsp margarine on each side of sandwich.
Place on a 325 degree F. grill or panini press.
Grill for 1 to 3 minutes on each side or until golden brown, and cheese is melted
Minimum internal temperature should be 140 degrees F. for 15 seconds
Cut sandwich in half diagonally and serve.
Note: Do not cover or sandwiches will get soggy.
Note: Shelf Life: 10 Minutes. If left over, do not reuse.


Sodexo PB&J for a Day - play to watch! Toasted Peanut Butter Baguettes

Peanut butter & honey - a yummy combination!

 

 

Ingredients
1 ea Baguette, French, fresh,
3oz Peanut Butter, smooth
½ ea Banana, ripe
1 T Honey, lavender
2 oz Jam, strawberry

Directions
Preheat oven to 350'
Cut a 6 inch portion of the baguette then slice it in half lengthwise
Spread the peanut butter on the bottom portion.
Slice the banana into pieces and cover the peanut butter
Drizzle the honey over the bananas and peanut butter
Put the top on and place in oven to warm, no more than a few minutes
Put the jam in a ramekin
Place the ramekin and sandwich on a plate, eat, and enjoy


Peanut Butter and Jelly Parfait - click to watch! Peanut Butter & Jelly Parfait

Dessert has a new name - and it's PB&J.

 

 

Ingredients:
1/2 cup Strawberry Jelly
1-1/4 cups nonfat vanilla yogurt
1/2 cup Peanut Butter
1 cup crunchy granola cereal
1 medium banana, sliced
1 cup sliced strawberries 
4 Sprig Fresh Mint

Directions:
Microwave in Bowl or heat Jelly pan, at HIGH 30 seconds or until melted
Drizzle 1 tablespoon down sides of each parfait cup; set aside
Combine yogurt with Creamy Peanut Butter Spread in medium bowl
Spoon 1/2 of the peanut butter mixture into each parfait glass
Top each with 2 tablespoons cereal, then 1/2 of the fruit; repeat
Drizzle with remaining Jelly. Garnish, if desired, with mint leaves
Note: Makes 4 servings and enjoy


Peanut Butter Pancakes - click to watch!Peanut Butter Pancakes with Raspberry Jelly Syrup

Breakfast never tasted so good.

 

 

Ingredients:
1 1/2 Cups
3 Tbsp Water
8 oz Creamy Peanut Butter
2 tsp Margarine, Melted
6 3/4 oz Complete Buttermilk Pancake Mix

Directions:
In a mixing bowl, combine water and peanut butter. Mix until smooth
Add margarine
Whisk in pancake mix until combined and smooth (do not over mix) 
Hold refrigerated for use
Coat griddle liberally with vegetable oil spray (not listed)
Portion 2 oz ladle batter per pancake onto a pan preheated to 325 degree F
Cook for 4 minutes or until golden brown
Flip and cook for an additional 4 minutes
Portion: Serve 2 pancakes.
Note: Makes 6 Servings

Serving Suggestion:
Combine grape jelly and water (2 cups jelly for each 1/2 cup water) in a saucepan
Heat, stirring occasionally, until combined and in a syrup consistency
Serve with pancakes

PB&J Muffins - click to watch!Peanut Butter & Jelly Muffins

Take a walk, blueberry - there is a new muffin in town.

 

 

Ingredients:
2 ¼ cups -Water, cool approximately 72 degrees
2 ½ pounds- muffin mix, any plain vanilla flavored mix
1 Cup- smooth peanut butter
1 Cup- strawberry jelly
½ cup- strawberry jelly for topping
½ cup- coarse granulated sugar for topping.  Regular sugar would also work
½ cup- granulated peanuts for topping

Directions:
Makes 28 muffins               
You will need a muffin baking pan. You can also use paper cupcake molds.

Pre heat oven to 350 degrees
Pour total amount of water into a mixing bowl
Add total amount of muffin mix & combine with a rubber spatula until water is absorbed
You may have small lumps. Make sure all the muffin mix is combined
Using a non stick pan spray, spray a muffin pan completely on the bottom & sides
Place 2 tablespoons of the combined muffin mix into a paper muffin cup
Place ½ tablespoon of peanut butter & ½ tablespoon jelly on top of the muffin
Mix - be sure to get it in the middle of the mix
Place another 2 tablespoons of muffin mix on top of the peanut butter & jelly
Sprinkle ½ tsp sugar & ½ tsp granulated peanuts on the entire top of the muffin
Bake at 350 degrees for 10 minutes
Using a hot glove or pad, remove muffins from the oven & place ½ tsp strawberry jelly in the center of the muffin
Return muffins to the oven & bake for an additional 12-15 minutes or until golden brown
Allow muffins to cool completely before serving
